Not eating dairy or eggs hasn’t stopped me from enjoying some of my favorite foods – and caesar salad is one of them! I love adapting a non-vegan recipe into a vegan recipe that actually tastes GOOD. If you’re vegan or vegetarian, you’ve probably tried many different kinds of imitation cheeses and meats…and so many taste like shit.
Not this caesar dressing! I played with the recipe and got it down to a science. It’s creamy, garlicy, and so delicious. You would never guess that it’s vegan.
Dressing Ingredients:
+ 1/2 cup raw cashews (the best nut to use to make anything creamy!)
+ 1/4 cup water
+ Juice of 1 lemon
+ 1/2 tablespoon freshly chopped garlic
+ 3 tablespoons extra virgin olive oil
+ 1 teaspoon salt
Blend all of these ingredients together using a strong blender. I use the Ninja Pro as it really smoothes the nuts completely.
Croutons:
+ 2 slices of Food For Life bread (vegan, sugar free, gluten free bread)
+ 1 teaspoon extra virgin olive oil
Cut the bread into 1 inch cubes, drizzle olive oil on top, and bake at 350 for about 25 minutes.
Chop up some romaine, and then throw it all together!
