Is anyone else planning very last minute Thanksgiving dishes? If you’re stumped on a side dish that is healthy AND delicious AND satisfying, you need to try this one. The ingredients are not those you’d think would go together well, but OMG are they so perfect together. The crunch of the celery mixed with the heartiness of the brussel sprouts and potatoes topped with a savory-sweet “dressing” is just pure perfection.
Ingredients:
3 cups of chopped brussel sprouts
3 stalks of celery
1 cup of 1 inch cubes of potatoes
For the dressing:
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 tablespoon raw agave
Directions:
+ Roast brussel sprouts tossed with coconut oil at 450 degrees for 30 minutes.
+ While brussel sprouts are roasting, boil 6 cups of water – add potatoes to water and boil for 10 minutes, then drain.
+ Chop celery stalks into small slices
+ Toss everything together!
…Off to the grocery store now for more Thanksgiving goodies…nothing like last minute prepping!
