This little number might look like it is the most unhealthy smoothie bowl you’ve ever seen, but it is actually filled with superfoods and is HEALTHY. No gluten, no dairy, no added sugar. All natural, baby.
Think: strawberries, unsweetened shredded coconut, flax seeds, KALE, yes, kale, a carob (basically the best thing ever to get your chocolate fix without the guilt), and much more.
I’m the queen of making the most unhealthy, sweet recipes into delicious and healthy alternatives. That don’t taste like crap.
Onto the recipe:
The smoothie:
+ 1/2 cup kale (I used baby kale from Trader Joes – no chopping FTW!)
+ 1/2 cup frozen strawberries
+ 1/4 cup blueberries
+ 1/4 raspberries
+ 1/2 tablespoon flax seeds
+ 1/2 tablespoon chia seeds
+ 1/2 cup cold water
Blend it all together! I use the Ninja Nutri Bullet.
Granola recipe:
I like to make my own granola because store-bought granolas are usually packed with sugar, wheat, and no-good ingredients. And the good ones are super pricey. Plus, it’s fun to add exactly what you like. My go-to formula is: 4 cups of gluten free oats, 1 cup seeds of your choice, 1/2 cup dried fruit, 2 tablespoons of your favorite spice(s), 1 cup unsweetened coconut, 1 teaspoon vanilla, 1/2 cup of fat (olive oil etc.), 1/4 cup low glycemic sweetener. So, here’s exactly what I used for mine:
+ 4 cups gluten free oats
+ 1 cup unsweetened shredded coconut
+ 1 cup raw pumpkin seeds
+ 1/2 cup dried cranberries
+ 1/2 cup melted coconut oil
+ 1/4 cup raw agave nectar
+ 1 teaspoon vanilla
Mix everything together, preheat oven to 350 degrees. Lay the mixture out on a baking sheet, and bake for 30 minutes or until golden brown.
The rest of the toppings:
Add whatever you like depending on what you’re in the mood for. If you’re craving more fruitiness, add sliced figs and fresh fruits. This time, I wanted a mixture of fruity and sweet so I used the granola, unsweetened coconut shreds, and carob chips. If you haven’t tried carob chips, you NEED TO. They are vegan and are natural – they taste JUST like chocolate.
